Chicken Burrito Bowl

Prep Time: 15-20 minutes
Cooking time: 8-10 minutes

Ingredients:
2 lbs chicken breast, grilled and diced
2 avocados, diced
1 cup diced bell pepper (I prefer yellow)
1 cup black or pinto beans
1/2 cup corn kernels (I grill mine on the cob)
1/2 cup diced sweet onion (or any onion of your choice)
1/4 cup diced tomatoes
1 cup of quinoa or wild rice
2 tbsp of dressing (i will put my preferred dressing recipe below)
Home Made Jalapeno Dressing:
2 cups greek yogurt
2 jalapenos, roughly chopped
1 large handful of cilantro
2 garlic cloves
1 tbsp extra virgin olive oil
2 tsp salt
1/8 tsp black pepper
2 juiced limes
Combine all of the dressing ingredients together in a food processor or blender, until you've achieved your desired texture.
Craft together your desired ingredients into a bowl, add your dressing, and enjoy!
