Chicken Burrito Bowl

Prep Time: 15-20 minutes

Cooking time: 8-10 minutes

Ingredients:

  • 2 lbs chicken breast, grilled and diced

  • 2 avocados, diced

  • 1 cup diced bell pepper (I prefer yellow)

  • 1 cup black or pinto beans

  • 1/2 cup corn kernels (I grill mine on the cob)

  • 1/2 cup diced sweet onion (or any onion of your choice)

  • 1/4 cup diced tomatoes

  • 1 cup of quinoa or wild rice

  • 2 tbsp of dressing (i will put my preferred dressing recipe below)

Home Made Jalapeno Dressing:

  • 2 cups greek yogurt

  • 2 jalapenos, roughly chopped

  • 1 large handful of cilantro

  • 2 garlic cloves

  • 1 tbsp extra virgin olive oil

  • 2 tsp salt

  • 1/8 tsp black pepper

  • 2 juiced limes

Combine all of the dressing ingredients together in a food processor or blender, until you've achieved your desired texture.

Craft together your desired ingredients into a bowl, add your dressing, and enjoy!
