Bell Pepper Taco Pizza

Ingredients For Stuffing:

  • 4 female bell peppers (4 nubs)

  • 1/2 cup of quinoa

  • 1/2 cup of beans (I prefer black)

  • 1 cup of ground turkey meat

  • 1/4 cup of shredded low fat mozzarella cheese

  • Taco seasoning (optional, you can season your meat how you prefer)

  • Salt and pepper to taste

  • 1/4 diced sweet onion

  • 2 1/2 cups of water

  • 1 tbsp of olive oil

Ingredients For Taco Seasoning:

  • 1 tbsp chili Powder

  • 1/4 tsp garlic Powder

  • 1/4 tsp onion Powder

  • 1/4 tsp crushed Red Pepper Flakes (optional)

  • 1/2 tsp dried Oregano

  • 1/2 tsp paprika

  • 1 1/2 tsp ground cumin

  • 1 tsp salt

  • 1 tsp of black pepper

Ingredients For Marinara Sauce:

  • 15oz can of Hunt's tomato sauce of your choice (I prefer crushed)

  • 2 tbsp extra-virgin olive oil

  • 2-3 minced garlic cloves

  • Small dried whole chile, or pinch crushed red pepper flakes (optional)

  • 1/2 tsp salt

  • 1 large fresh basil sprig slivered

  • 1/4 tsp dried oregano

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • Taste and adjust to your liking!

Preheat your oven to 375 degrees Fahrenheit.

Place a medium to large skillet, and two small pots over medium to high heat. Add the oil to the skillet , 1 cup of water into the bean pot, and 1 1/2 cups of water into the quinoa pot. Place a medium pot over medium heat and fill with the marinara sauce ingredients, bring to a simmer and continuously stir for 8-10 minutes, then set aside.

In a bowl mix together your ground turkey and taco seasoning (other seasoning choices if you prefer.)

Add your onions to your heated skillet, once caramelized add in your ground turkey. Cook thoroughly and set aside.

Add your beans and your quinoa to their designated pots. Cook thoroughly and set aside.

Slice your bell peppers down the center vertically, gut them and place them on a baking sheet. Pop them into the oven for 3-5 minutes before stuffing, then set aside.

Mix all of your stuffing ingredients together in a large bowl. Brush or coat the bottom of your bell pepper with the marinara sauce, then stuff the pepper. Dollop a small amount of marinara sauce on top of the stuffing, then sprinkle with mozzarella cheese.

Place the stuffed peppers back into the oven for an additional 10-15 minutes.

Remember: This is my bell pepper taco pizza recipe, which means if you decide you dislike these ingredients, you can make your own! Mix it up, maybe make a hawiian or veggie belle pepper pizza. It's all about have fun and expirimenting in the kitchen!
