Sweet Turkey Chili

Sweet turkey chili is a great hearty meal for both lunch or dinner, especially when you're trying to eat lean.
Prep time: 15 minutes
Cook time: 25-35 minutes

Ingredients:
1 cup of organic chicken broth
1tbsp of avocado or olive oil
1lb of ground turkey
1/2 a sweet onion
2-3 cloves of garlic
28oz of crushed tomatoes
15oz of red kidney beans
2 corn cobs
1 large red bell pepper
1/2 cup of low fat shredded mozzarella cheese
1 bay leaf
1tsp of dried oregano
1tbsp of chili powder
1tsp of cumin
salt and pepper to taste
1/2 stick of butter
In a large pot heat the oil and brown the ground turkey. Dice the onion, garlic, and red bell pepper, then mix them together with the turkey.
Once the onion becomes translucent add in the tomatoes, chicken stock, and seasonings. Bring the mixture to a simmer for 15 minutes, while stirring occasionally.
While the chili is cooking, on a grill pan, heat 1/4 stick of butter and coat the corn cobs with the remaining 1/4 stick. Cook the corn cobs until you see char marks and slice the corn from the cob. Incorporate the corn, kidney beans, and mozzarella cheese.
Let the chili simmer for an additional 10 minutes.
Check on the consistency of the chili. If you prefer yours thicker let the chili simmer for additional 5 minute intervals, until you're satisfied.
