Chick Pea Salad

Ingredients:
29 oz of chick peas
1/2 of a large sweet onion, diced (or one whole small onion of your choice)
3 roma tomatoes (or any tomatoes of your choice, if cherry 10-15 halved)
two hand fulls of arugula or spinach
1/4 of a cup of fresh parsley (if you use dried a 1/2 tbsp)
salt and pepper to taste
In a large mixing bowl, toss your ingredients, then pop them in the fridge.
Enjoy it chilled!
Tip: Have fun with this recipe, you can replace or add anything you believe will taste well! I.E: Cucumber, fetta, bell pepper, squash, etc!
