Lemon Zest Skillet Steak

Cook time: 15-20 minutes

Ingredients:
2 1lb 1'' thick steaks
1 large garlic clove (grated)
1 large lemon (juiced & zest)
1/3 cup of water
4 tbsp of olive oil
1 pound of baby potatoes
1-2 pounds of green beans
tbsp of butter
salt pepper to taste
1/2 tsp of garlic powder
1 tbsp of dried parsley
1 tsp of dried mint
1 tsp of smoked paprika
1/2 tsp of dried crushed red pepper
Salt and pepper to taste
Preheat your oven to 400 degrees frarenhiet
Slice your baby potatoes down the middle and place them in a large bowl with a table spoon of olive oil, salt, and pepper to taste. Toss them in the bowl and spread them out on a large baking tray.
Cut the ends off of your green beans and toss them into the bowl you've used for the potatoes with a tbsp of olive oil, salt, pepper, and a pinch of lemon zest. Set the bowl aside.
In a separate bowl whisk together your lemon juice, zest, water, olive oil, mint, parsley, red crushed pepper, paprika, garlic, salt, and pepper.
Once your oven is heated place your baby potatoes in the oven for approximately 10-12 minutes.
Prep your steak by sprinkling garlic powder, salt, and pepper on each side, then place them in your large heated non stick skillet (if your skillet is not nonstick, brush a little olive oil to coat the pan or use nonstick spray). TIP: make sure your steak has rested at room temperature, cold protein seizes when its placed on heat and will become tough. Once you've seared one side, flip it to sear the other and add your lemon sauce. Then cook your steaks through to desired temperature (I enjoy my steaks medium rare to medium so I sear them for about 2 minutes on each side if they're 1'' thick.) TIP: if your steak does not sizzle when you place it on the skillet, your skillet is not hot enough. Remove and wait, this is how you achieve a nice seared outside and a juicy center.
Once your steak is done, turn the burner off and let it rest for 10-15 minutes (this lets the steak finish cooking, while allowing the juices to remain in the meat.)
Remove your baby potatoes from the oven and add them to your skillet, so they can absorb some of the sauce.
Using the same baking tray, spread out your green beans and place slivers of butter along the top. Then pop them in the oven for approximately 5 minutes (I enjoy my green beans with some crunch, if you like yours softer I would leave them in longer.)
