Banana Protein Pancakes

Typically for breakfast I make myself a shake if I'm on the go, but here's a recipe I enjoy when I have no where to be and want go all out.

Prep time: 10 minutes

Cook time: 5 minutes

Ingredients:

  • 2 medium ripe banana.

  • 2 medium eggs.

  • 1tsp of sunflower seed or avocado oil

  • ¼ teaspoon baking powder (for fluffy pancakes)

  • ¼ teaspoon vanilla

  • pinch of cinnamon (optional)

  • 1 tablespoon cocoa powder or protein powder of choice

In a mixing bowl mash the bananas, once their smooth incorporate the two eggs. Your mixture will appear to be a bit runny, but that's okay. Add in the baking powder, vanilla, cinnamon, and protein powder.

Pour oil onto a hot pan, when ready use a ladle or large spoon to pour the batter. Cook for approximately one minute or until the bottom is a golden with some browning, then flip and repeat.

Note: Best when still warm. Feel free to garnish with fruits and toppings of your choice, I drizzle honey on my pancakes, then top them with walnuts and blueberries. Somehow a side of turkey bacon always finds a spot next to my pancakes :)
