Portuguese Kale Soup

In this recipe it's just my preference on items, by all means you can use your favorites or preferred flavors!

Prep time: 10 minutes
Cook time: 20-30 minutes
Ingredients:
1 large sweet onion
4-5 cloves of garlic (minced)
1lb Ground chourico or sliced
4-5 Yukon gold potatos (chopped)
1tbsp olive oil
Salt and pepper to taste
2 bay leaves
3 cups of collard greens
64 oz organic chicken broth
15 oz red kidney beans
Drizzle the olive oil in the pot and bring it to medium high heat, then add the onion, garlic, chourico, and potatoes. Cook this mixture for 5 minutes with the lid on and continuously stir.
Once that's done add two bay leaves, a pinch of salt and black pepper ( remember there's salt in your chourico!) Add your desired amount of collard greens (Portuguese kale) I cut them into 3/4s of an inch strips and then put them in the pot, letting them wilt for about 2 minutes with the lid on.
Add in the chicken broth and red kidney beans, then bring that to a boil with the lid on, for 15 minutes and stir continuously.
Finally salt and pepper the soup to taste again.
