Turkey & Quinoa Taco Salad

Happy guilt free taco Tuesday, the perfect recipe if you're trying to become healthier and still feel like you're indulging. If you're a vegetarian you can substitute the turkey with your favorite vegetarian protein, or double up on quinoa and vegetable stock!

Prep time: 15 minutes

Cook time: 25 minutes

Ingredients

  • 1 cup of organic quinoa

  • 2 cups of organic chicken broth (vegetable broth if vegetarian.)

  • 1 lb of ground turkey

  • 1 1/2 cups of organic black beans (I buy mine in a bag then precook them, but canned is okay too!)

  • 1-1 1/2 cups of low fat & low sodium cheese of your choice

  • 4 cups of shredded organic lettuce

  • 1 cup of diced organic roma tomatoes

  • 1 small sweet onion diced

  • 3 cloves of garlic

  • 2 tbsp of olive oil

  • 1 packet of taco seasoning (recipe for home made taco seasoning below.)

  • 3 tbsp of low fat sour cream (can substitute with guacamole or avocado slices.)

  • 1/4 cup chipotle or taco sauce

Bring broth to a boil in a small pot, add in quinoa. Then cook the quinoa for 10 minutes (15 for the vegetarian option), strain, and set aside.

Preheat your oven to 350 degrees fahrenheit.

Mix taco seasoning in a bowl with the ground turkey. Place a large skillet on medium high heat, add olive oil and stir in your onions and garlic until golden brown. Then add in seasoned turkey to the skillet, incorporate the onions and garlic, then separate the turkey into bits.

Once the turkey seems mostly cooked through, remove from burner, add in the quinoa, and stir.

Add turkey and quinoa mix to the bottom of a medium sized oven safe glass dish, next make a layer of the black beans, then sprinkle cheese on top.

Place the dish into the oven until cheese is melted.

Once the cheese has melted remove the dish from the oven and layer your salad with the lettuce, tomatoes, sour cream or avocado slices, and sauce of your choice.

Home made taco seasoning recipe:

  • 1 tbsp chili Powder

  • 1/4 tsp garlic Powder

  • 1/4 tsp onion Powder

  • 1/4 tsp crushed Red Pepper Flakes

  • 1/2 tsp dried Oregano

  • 1/2 tsp paprika

  • 1 1/2 tsp ground cumin

  • 1 tsp salt

  • 1 tsp of black pepper
