One of my most favorite snacks to indulge in is granola! Lets be real, its actually candy, but I'm trying to be healthier. This granola reminds me a lot of an almond joy candy bar (one of my favorites.) I make my granola in large batches, this way I always have a mason jar waiting for me in the fridge (I like my granola chilled.) I prefer it on its own, but it's just as delicious with Greek yogurt!
Feel free to tweak this recipe, as I use products I prefer, to better suit you!
Total time it takes me to make: 50 minutes
Ingredients:
10oz of oats
2-3 tbs of sugar free fat free chocolate jello powder
1/2 cup of raw organic local honey
2 tbs brown sugar
1/2 cup of shredded organic coconut
1/2 cup of dark chocolate chips
1/4 of a cup of almonds (chopped)
Directions: Preheat the oven to 350 degrees, while that's going mix the honey with brown sugar and incorporate the mixture into the oats. Once the oats are all coated, sprinkle them with sugar free fat free chocolate jello powder. Spread the oats onto a baking sheet, lined with aluminum foil, and place them in the oven for 20 minutes. After the 20 minutes are over, take the baking sheet out of the oven and add chopped almonds. Once the chopped almonds are incorporated into the oats, place the baking sheet back into the oven for an additional 10 minutes. Once the 10 minutes are over, remove the baking sheet and incorporate the shredded coconut into the mixture. Let the mixture cool on the baking sheet for 10 minutes, then add the chocolate chips and let sit for 5 minutes (this will melt the chips.) When the chocolate chips are melted, stir the mixture until the chocolate forms clusters. Lastly enjoy your granola, guilt free, warm or cold!
