Vegan Guilt Free Brownies

Prep time: 10 minutes

Bake time: 14-18 minutes

Cool time: 10 minutes

Ingredients
  • 1 1/2 cups black beans (drained and rinsed)

  • 2 tbsp cocoa powder

  • 1/2 cup quick oats

  • 1/4 tsp salt

  • 1/3 cup pure maple syrup (h

  • oney if you're not vegan)

  • 2 tbsp sugar

  • 1/4 cup coconut oil

  • 2 tsp pure vanilla extract

  • 1/2 tsp baking powder

  • 1/2 cup to 2/3 cup of dairy free chocolate ( or whatever your preference is, I enjoy peanut butter) chips (if you're not vegan any chips of your choice are fine)

Preheat oven to 350 Fahrenheit.

Combine all ingredients, but the chocolate chips, in a food processor, and blend until the mixture. You may have to stop a few times to scrape the sides. Do this until the mixture is smooth.

By hand stir in the chocolate chips, then pour the mixture into a greased 8×8 heat safe dish.

Bake the brownies between 14-18 minutes (I enjoy my brownies on the chewy side so I go with 14), then let cool at least 10 minutes before trying to cut.

If the brownies seem under baked, you can place them in the fridge for a few hours and they will become firm.
