Lemon Pepper Blistered Tomatoes and Green Beans

Cook time: 5-8 minutes

Ingredients:
1lb of fresh green beans
10-15 cherry tomatoes (halved)
1/2 cup of vegetable stock
1/2 of a lemon (juiced)
Sprinkle of lemon zest
1-3 cloves of garlic (minced or grated): optional
1 tsp of black pepper (or to taste)
1 tsp of salt (or to taste)
In a large skillet add in the vegetable stock and lemon juice, then bring to a simmer. Add in your green beans, salt, pepper, and grate the lemon for desired zest. Once the green beans have simmered for 2 minutes or so add in the tomatoes and garlic, stir the mixture, letting most of the stock evaporate.
I enjoy some crunch to my green beans so I only cook them for about 5 minutes, if you enjoy yours on the softer side continue to cook them until they're to your liking!
