Smashed Potatoes

I don't know about you, but I love a good smashed potato. Fear not, if you love them smooth, you'll just have to take the extra step and use a beater in the end.

Prep time: 20 minutes

Cook time: 30 minutes

Ingredients:

  • 5-6 Medium to large red potatoes

  • 2-3 Garlic cloves

  • 1/4 of a stick of butter

  • 1/2 a stick of Philadelphia cream cheese

  • 1 tsp of oregano

  • 1 tsp of parsley

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 tsp of olive oil

  • Chives for garnish

  • Salt and pepper to taste

On the stove top prepare your pot of water, olive oil, half a clove of garlic and a dash of salt. As you wait for your pot of water to come to a boil, cube your potatoes before placing them in. Let your potatoes cook, remove once tender.

Mince your garlic cloves and set aside.

Strain and pour your potatoes in a large mixing bowl, smash the potatoes wish a fork or potato masher. Once you have your desired consistency, incorporate the butter, cream cheese, oregano, parsley, garlics, onion, salt and pepper. Transfer to your serving dish, and garnish with some fresh or dried chives!
